Dear readers of “Buongiorno Italians,” we hope everything is going well with the organization of dinners and lunches for these important dates.
Over here, our moms are already stressed at the thought of what they have to cook for all the relatives and to make a good impression with mothers-in-law and sisters-in-law! Remember that for Italians, the art of cooking is serious business! Today we give you a great recipe for a first course that will undoubtedly please everyone, even inconvenient relatives! We are talking about pasta with salmon!
INGREDIENTS FOR 4 PAX
- 300 g smoked salmon
- Fresh liquid cream 200 g
- Extra virgin olive oil
- 1 spring onion
- The zest of one lemon
- 300 g of tagliatelle/ farfalle pasta
- Salt and pepper
PREPARATION (APPROXIMATELY 20 MINUTES)
Fry the spring onion in extra virgin olive oil. In the meantime, cut the salmon into not-too-small strips and incorporate to the pan, immediately after add the fresh liquid cream, lemon zest and turn off the heat.
Cook the pasta in plenty of lightly salted water following the instructions on the package, be sure of “al dente” cooking otherwise you would have failed! Finally, season with pepper.
