The “Streghe”/Witches in Bologna?

Don’t worry, the Witches in Bologna are not scary, on the contrary, they are so good and tasty that they can be eaten …
Believe it, one leads to another!
Do you want to know more about Streghe?
They are a typical bread of bolognese cuisine and surrounding countryside.
They are thin “sheets of bread” crunchy and salty on the surface, baked in the oven in different shapes: square, rhombus, and circle.
They can be made with any type of flour, cooking is fast and the consistency is crunchy.

Streghe are born in bakeries, with a specific goal: to check the temperature of the oven to bake bread … the bread was too precious to be burned.
In the past, bread was baked only in firewood ovens, and to understand if the temperature was the optimal one, it was customary to put these thin “sheets of bread” in the oven.
Often it happened the temperatures were too high and therefore they inevitably burned.. hence it is easy to guess the reason for the name.
Streghe are scrumptious for an aperitif, a perfect combo with cold cuts, cheeses, and jams. You can eat them alone as a mid-day break or paired with salads or vegetables baked in the oven.

Ingredients: per 6 servings
– Soft wheat flour 500g
– Water 250 ml
– Salt 10g
– Brewer’s yeast 15g
– Extra virgin olive oil for the surface and salt
Directions:
Put the flour in a bowl.
In another bowl, dissolve the yeast in the lukewarm water.
When it is dissolved add it to the flour bowl. Add the salt and keep on to knead until it forms a ball, and cut the surface into a cross shape with a knife blade.
Cover with cling film/plastic wrap and leave to rest for an hour. Divide the dough into 4 equal parts, stretch it on a very thin “sheet” and place it on the baking sheet with parchment paper.
With a knife, cut the surface into rhombuses (about 6 cm on the long side), or squares 6×6 cm.
Put oil and salt on top and bake 15 minutes in a hot oven, 200 degrees.
